(Alyssa’s) Banana Nut Muffins

INGREDIENTS

2 cups of all-purpose flour

3 teaspoons baking powder

˝ teaspoon salt

1 cup granulated sugar

˝ cup of vegetable shortening

2 large eggs

1 1/3 cups of mashed bananas (4 medium)

1 cup chopped nuts

INSTRUCTIONS

Pre-heat oven to 350 degrees.  Prepare a 12 muffin tin by greasing each well or by placing a paper baking cup into each

 

Sift together flour, baking powder, salt;  SET ASIDE

 

Cream together sugar 2/ shortening until light and fluffy in a large mixing bowl; beat in eggs (one at a time) blend well.  Stir in mashed bananas.

 

Add dry ingredients all at once stirring just enough to moisten.  Mix in chopped nuts.  Fill in tin 2/3 full.

 

Bake 20 minutes until golden brown.
