Bavarian Cream

Nanny’s Recipe




1 Tbs plain gelatin (1 small envelope)

¼ cup cold water

1 tbs vanilla

¾ cup boiling water

¾ cup sugar

3 eggs separated

1 cup (½ pt) heavy cream



Soften gelatin in cold water.  Stir in boiling water until dissolved.

Add vanilla.

Beat half of sugar in egg yolks gradually.

Beat until thick and lemon color.

Add gelatin mixture.

*Chill over ice water stirring frequently until it is slightly thickened.

Beat the other half of sugar into egg whites - gradually.

Fold the yellow mixture into the white mixture.

Whip cream until thick and fold gently into the mixture.

Place in refrigerator for several hours or until firm and set.

Serve w/ strawberries or raspberries.


* To chill over ice water means-place dish with gelatin mixture in a shallow pan.

Put ice cubes around dish and stir frequently
