Vito’s Lemon Chicken

Ingredients

 

 

1 pkg of chicken cutlets (1 to 2 pounds)

(1) 10½  oz. can of cond. Chicken broth

½ (+) cup of white wine

¼ to ½ cup lemon juice

seasoned bread crumbs (don’t be afraid to spike the bread crumbs)

eggs / milk

fresh garlic and olive oil

chopped fresh parsley

grated Romano cheese

2 chicken bullion cubes

 

Instructions

 

  1. dip cutlets in egg and milk and bread w/ seasoned bread crumbs
  2. repeat step one
  3. fry cutlets in olive oil and fresh garlic cloves
  4. drain cutlets well and put in long casserole pan
  5. pre-heat oven 350 degrees
  6. sprinkle lightly w/ grated cheese
  7. mix wine / lemon juice / soup / salt & pepper / parsley …
  8. pour mixture over chicken … put in 2 low sodium bullion cubes
  9. cover (w/ lid or foil)
  10. cook in oven @ 350 degrees for 30 minutes
