Southwestern Bruschetta

INGREDIENTS

  • 1 long loaf crusty French bread (baguette), cut into 12 slices
  • 3 tablespoons olive oil
  • 1 tablespoons fresh lime juice
  • 1 tablespoon minced cilantro
  • cup chopped plum tomatoes
  • cup frozen corn, thawed
  • cup minced green peppers
  • 2 garlic cloves, minced

INSTRUCTIONS

1)     Preheat the oven to 375F.

2)     Brush each slice of bread with the oil, and toast the bread slices on a cookie sheet in the oven for 5 minutes.

3)     Combine the remaining ingredients in a bowl, and top each slice of bread with the bruschetta.
