GINGERBREAD CAKE

INGREDIENTS

2¼ cups all-purpose flour

2 teas baking soda

1 teas cinnamon

½ teas ground ginger

½ teas ground allspice

¼ teas salt

1 cup unsweetened applesauce

1 cup light molasses

2/3 cup fat-free egg substitute

½ cup sugar

½ cup pitted prunes, finely chopped

 

PREPARATION INSTRUCTIONS

1.     Preheat the oven to 350 degrees.  Spray a 13 x 9” baking pan with    nonstick cooking spray.

2.     In medium bowl, combine the flour, baking soda, cinnamon, ginger, allspice and salt.

3.     In a large bowl, with an electric mixer at medium speed, beat the applesauce, molasses, egg substitute, sugar and prunes until frothy, about 2 minutes.  With the mixer at low speed, gradually add the flour mixture; stir until just combined (do not over mix).  Add the water and stir until smooth.

4.     Pour the batter into the pan.  Bake until a toothpick inserted in the center comes out clean, about 40 minutes.  Cook completely in the pan on a rack.
