Low-Fat Devil’s Food Cake

Uses less fat, sugar or salt.

 

 

1 package (18-Ľ ounces) reduced-fat devil's food cake mix

1 carton (8 ounces) nonfat plain yogurt

˝ cup orange juice

˝ cup water

Egg substitute equivalent to 2 eggs

2 tablespoons unsweetened applesauce

2 tablespoons grated orange peel

1 teaspoon ground cinnamon

GLAZE:

1 cup confectioners' sugar

2 tablespoons baking cocoa

2 tablespoons orange juice

˝ teaspoon vanilla extract

 

 

 

In a mixing bowl, combine the first eight ingredients; beat on low speed for 1 minute, scraping the bowl constantly. Coat a 10-in. fluted tube pan with non­stick cooking spray and dust with flour. Pour batter into pan. Bake at 350° for 50­ - 55 minutes or until a toothpick comes out clean. Cool for 10 minutes before re­moving to a wire rack to cool complete­ly. Combine the glaze ingredients; driz­zle over cake.
