ľ cup light butter, softened
1 2/3 cup mashed ripe banana (about 3)
ľ cup skim milk
ľ cup low fat sour cream
1 large egg whites
2 cups all purpose flour
1 teasp. Baking soda
Ĺ teasp. Salt
††††††††† Preheat oven to 350 degrees
1. Combine sugar and butter in a bowl; beat at medium speed on mixer until well blended.
2. Add banana, milk, sour cream, and egg whites.† Beat well, set aside.
3. Combine flour, baking soda and salt.† Stir well.† Add dry ingredients to creamed mixture, beating until well-blended.
4. Spoon batter into loaf pan coated with cooking spray.† Bake at 350 degrees for about 1 hour and 10 minutes or until toothpick inserted in center comes out clean.
