Pumpkin-Spice Cupcakes

1 package spice cake mix

1 can (15oz) can unsweetened mashed pumpkin

cup egg substitute

1 cup sifted powdered sugar

teaspoon grated orange rind (optional)

2 tablespoons orange juice



Preheat oven to 350.


Place paper muffin cup liners in each of 24 muffin

cups. Combine first 3 ingredients in a large; bowl; beat with a mixer at low speed until well

blended. Beat at medium speed 2 minutes. Divide batter evenly among prepared muffin cups.


Bake for 18 minutes or until cupcakes spring back when touched lightly in the center. Let cool completely on wire racks.


Combine powdered sugar, orange rind and orange juice - stir until smooth. Dip tops of cupcakes in glaze.
