SPAGHETTI SQUASH PIE (MOCK COCONUT CUSTARD)

INGREDIENTS

 

2 cups cooked spaghetti squash

cup flour

cups sugar

tsp. of vanilla

1 tsp. of coconut extract

2 eggs or 6 egg whites

cup evaporated skim milk

1 cup of skim milk

 

 

Pre-heat oven 350

Mix all ingredients in a blender then add spaghetti squash slowly.

Spray a 10 inch casserole pan with non-stick cooking spray.

Pour mixture into pan. Place in pre-heated oven for 45 minutes to 1 hour.

When knife comes out clean, it's done.
