Brownie Pie


3 egg whites


2 Tbsp firmly packed light brown sugar


18 (2") chocolate graham cracker squares, made into crumbs


cup walnuts, finely chopped


tsp vanilla extract


1 pint frozen vanilla-flavored nonfat yogurt, slightly softened




1. Preheat oven to 325 F Spray 9" pie plate with nonstick cooking spray.

2. In large bowl, with electric mixer at medium-high speed, beat egg whites until soft peaks form, 3-4 minutes. Gradually add sugar and beat, at medium-high speed, until stiff peaks form, 2-3 minutes.

3. Using rubber spatula, gently fold in cracker crumbs, nuts, and vanilla until just blended. Scrape mixture into pie plate. Bake until firm and toothpick, inserted in center, comes out clean, about 25 minutes. Cool completely on rack.

4. Spread yogurt over pie; cover and freeze, until yogurt is very firm, 2-3 hours.
