Chocolate Eclairs

Yield/Serves: 24/12

INGREDIENTS

      72 regular saltine crackers

      3 cups skim milk

      2 small boxes instant sugar-free vanilla pudding mix

      8 oz tub of fat free whipped topping

      8 oz jar fat-free hot fudge sauce

 

INSTRUCTIONS

 

1)     Mix milk and pudding according to package directions; fold in
whipped topping.

2)     Lay 24 crackers in a 9 x 13" pan.

3)     Spread 1/2 of pudding mixture over the top.

4)     Layer another 24 crackers on top of pudding mixture and then spread remaining pudding mixture on top.

5)     Top with another 24 crackers. Cover top layer with fat-free fudge sauce. Refrigerate overnight if possible.

6)     Cut into 24 squares. Enjoy!!!

 

 

  • This recipe does call for regular saltines though....I've heard the ff ones don't work nearly as well.

 

 

 

Puff Pastry

Yield/Serves: 24 / 12

INGREDIENTS

> 72 regular saltine crackers
> 3 cups skim milk
> 1 small boxes instant fat-free, sugar-free pudding mix
> 8 oz tub of fat free whipped topping
> can of Cherry Pie Filling

INSTRUCTIONS

 

1)     Mix milk and pudding according to package directions

2)     Lay 24 crackers in a 9 x 13" pan.

3)     Spread the pudding mixture over the top.

4)     Layer another 24 crackers.

5)     Spread a layer of cherry pie filling

6)     Layer the remaining crackers.

7)     Layer with fat free whipped topping

8)     Refrigerate overnight if possible.

Cut into 24 or 12 squares. Enjoy!!!
