Mint Chocolate Truffles

1/3 cup semi-sweet mint chocolate chips

cup (4 oz) fat-free cream cheese, softened

cup unsweetened cocoa

cup sifted powdered sugar

2 tablespoons semisweet mint mint-chocolate chips



1. Place 1/3 cup chocolate chips in a microwave safe bowl; microwave on high 1 minute or until almost smooth. Cool

2. Add cheese to melted chips; beat with a mixer at medium speed until smooth. Add package of sifted powdered sugar, 1 cup at a time, beating until well blended. (Mixture will be stiff and dry)

3. Press mixture into a 6-inch square on plastic wrap; cover with additional plastic wrap. Chill at least 1 hour.

4. Remove top sheet of plastic wrap; cut mixture into 48 squares. Roll each square into a ball; place on wax paper. Roll half the balls in cocoa; roll remaining balls in cup powdered sugar.

5. Place 2 tablespoons chocolate chips in a heavy duty zip lock baggie; microwave on high 1 minute or until softened. Knead the bag until smooth. Snip a tiny hole in the corner of the bag and drizzle chocolate over balls rolled in cocoa. Serve at room temperature
