RASPBERRY-LEMON PARFAITS

INGREDIENTS

2 Scoops (1/4 cup) lemon sorbet

2 tbsp lemon curd

cup frozen raspberries in syrup

2 scoops (1/4 cup) raspberry sorbet

2 tbsp. Lite whipped topping

10 fresh raspberries

2 fresh mint sprigs (optional)

 

 

PREPARATION INSTRUCTIONS

1.               layer parfaits in 2 wine or dessert glasses, beginning with 1 scoop lemon sorbet in each glass, followed by 1 tablespoon lemon curd, 2 tablespoons frozen raspberries and 1 scoop raspberry sorbet. Freeze until ready to serve.

2.               Just before serving, top each parfait with 1 tablespoon whipped topping, 5 fresh raspberries and a mint sprig, if desired
