Seafood Stir-Fry

1 cup frozen broccoli

1 cup frozen sugar snap peas

(1) 8 oz lobster tail, or pound peeled, de-veined shrimp*

2 cloves crushed garlic

1 medium onion, sliced thin

2 Tablespoons soy sauce

Heat the olive oil in a non-stick skillet. Add the broccoli, sugar snap peas,

onion and garlic and stir-fry until broccoli is defrosted and hot (about 5 minutes).

Add chicken broth and bring to boil. Dissolve the cornstarch in the soy sauce

and add to pan, along with ginger. Allow to thicken, stirring constantly.

Simmer for 2 to 3 minutes until sauce reduces slightly.

Makes 2 servings.

With 1 cup white rice, an additional 5 points.

With 1 cup brown rice, an additional 4 points.

 

*     This dish may also be prepared with chicken instead of seafood.

*     If you use 1 cup diced chicken instead of the seafood, the dish will amount to 8 points a serving.
