Bruschetta with Tomatoes

My guests have never guessed that these salad-topped garlic toasts-so evocative of the Mediterranean-contain no fat.Bruschetta is so versatile that it can be served hot, warm, at room temperature, or chilled. You can prepare the topping and the garlic toasts ahead, but don't spoon on the topping until serving time, or the toasts will get soggy.

 

 

 

 

 

 

Ingredients:

rounds (about 1/a " thick x 1'/z" wide) Italian or French bread

 

3

cloves garlic

 

 

 

1

medium onion, coarsely chopped

 

2

large plum tomatoes, diced

cup thinly sliced fresh basil

 

 

 

2

teaspoons balsamic vinegar

 

 

 

 

Ground black pepper

 

 

 

 

Salt (optional)

Preheat the oven to 325įF.

Cover a baking sheet with foil.

Place the bread on the sheet in a single layer. Coat both sides with no-stick spray. Bake for 20 minutes, or until golden.

Cut 1 clove of the garlic in half. Rub the cut sides over the tops of the toast; discard the garlic halves.

Meanwhile, coat a large nostick skillet with no-stick spray. Add the onions. Mist with no-stick spray. Cover and cook over medium-high heat, stirring occasionally, for 3 to 4 minutes, or until the onions start to release liquid. Reduce the heat to medium. Uncover and cook, stirring occasionally, for 3 to 4 minutes, or until golden. If necessary, add 1 to 2 teaspoons water to prevent sticking.

Add the tomatoes. Mince the remaining 2 cloves garlic and add to the skillet. Cook, stirring occasionally, for 2 to 3 minutes, or until the tomatoes soften slightly. Remove from the heat.Stir in the basil and vinegar,Season to taste with the pepper and salt (if using.)

 

 

6.

Place a spoonful of the topping on each garlic toast.
