2 cups refrigerated shredded hash browns (such as Simply Potatoes)

1 cup Italian-seasoned breadcrumbs

1 cup chopped onion

½ cup ketchup

¼ cup Dijon mustard

2 teaspoons dried oregano

½ teaspoon salt

2 large eggs, lightly beaten

2 garlic cloves, minced

2 pounds lean ground beef Cooking spray

1/3 cup ketchup



1. Preheat oven to 375°.

2. Combine first 9 ingredients in a large bowl, and stir mixture well. Crumble ground beef over potato mixture, and stir just until blended. Shape mixture into an 8½ x 4½ ­inch loaf. Place loaf in an 11- x 7­inch baking dish coated with cooking spray.

2. Spread 1/3 cup ketchup over top of loaf. Bake at 375° for 1 hour and 15 minutes or until an instant-­read thermometer registers 160°. Let stand 5 minutes before slicing. Yield: 10 servings.
