This roast is a splurge for holidays - but not from a POINTS perspective!

4 pound lean whole beef rib(s), trimmed of visible fat

1 table salt

tsp black pepper

2 medium garlic clove(s), minced

cup Dijon mustard

2 Tbsp reduced-calorie mayonnaise

1 tsp horseradish sauce

cup parsley, chopped

2 Tbsp thyme, chopped

2 Tbsp dill, chopped



1. Heat oven to 375F. Season roast with salt and pepper.


2. In small bowl combine garlic, mustard, mayonnaise and horseradish. In another small bowl combine, parsley, thyme, dill and 1 tbsp mustard mixture.


3. Place meat rib-hone down in roasting pan. Coat top with remain mustard mixture. Cook until instant-read thermometer stuck in center of meat registers 11OF.then coat with remaining mustard mixture and press herb mixture onto mustard.


Continue cooking until thermometer registers 140F for medium. Cover loosely with foil; let stand 20 to 30 minutes then carve.
