Potato & Kielbasa Casserole

Baking potatoes (about 6 oz. Each)

28 oz.

Can crushed tomatoes

Onion, chopped

Fruity olive oil

1lb.

Lite Kielbasa (Hillshire Farms)

24 pts (6 points / lb. piece)

2 tbsp

Oregano

 

 

Salt & pepper to taste

Pre-heat oven to 400

 

In a large bowl:

 

 

Combine potatoes, onions and tomatoes

In a small bowl

 

Mix tomato paste, olive oil, oregano, salt & pepper

 

Pour over contents of large bowl

 

Put into large pyrex oven dish, cover tightly with tin foil

Bake at 400 for 1 hour

Cut Kielbasa into fourths

Brown kielbasa in pan with olive oil spray

After 1st hour of cooking, add Kielbasa to casserole, resealing tinfoil

Cook addition 20 to 45 minutes

Serve w/ green salad
