TEX-MEX TURKEY MEAT LOAF

 

 

2 cups (8 ounces) shredded reduced-fat sharp cheddar cheese

1 cup chunky salsa

¼ cup canned chopped green chilies

1 (15-ounce) can black beans, rinsed and drained

1 pound fresh ground turkey breast

Cooking spray

Additional chunky salsa (optional) Sliced green onions (optional)

 

1. Preheat oven to 375°.

2. Combine cheese, salsa, green chilies, and black beans in a large bowl; stir well. Crumble turkey over bean mix­ture, and stir just until blended. Shape mixture into a 6'/2- x 4'/2-inch loaf. Place loaf in an 11- x 7-inch baking dish coated with cooking spray.

3. Bake at 375° for 55 minutes or until an instant-read thermometer reg­isters 160°. Let stand 5 minutes before slicing. Serve with additional salsa, and garnish with green onions, if desired.
