Canadian Bacon and Cheddar Quiche

3 points allowance on Core Plan and

23 points on Flex Plan.

Preheat oven to 350 degrees

 

4 ounces Canadian Style Bacon

(Waldbaums-America’s Choice 97% F.F, 5oz., fully cooked)

1 cup Kraft Fat Free Shredded Cheddar Cheese (Stop & Shop)

White Pepper to taste (1/8 tsp.)

Pinch Cayenne Pepper

 

Spray a 10’ deep-dish pie plate with Pam.  Set aside.  Slice bacon into strips then squares…heat in a non-stick skillet (stir constantly) for 3 minutes.  Spread bacon evenly over bottom of pie plate.  Sprinkle cheddar evenly over bacon.  Sprinkle peppers.  Set aside.

 

In blender:

2 cups skim milk

6 Tablespoons flour = 3 points

3 tsp. baking powder

4 eggs

Blend for 3 minutes.  Pour over bacon and cheese mixture.

Bake 30 minutes then cover quiche with a sheet of foil to prevent burning.  Cook an additional 15 minutes.  Done when knife inserted in center comes out clean.

Cool 10-15 minutes
