Eggplant Caponata

Eggplant, unpeeled and chopped

Chopped mushrooms

Can tomato paste

Red wine vinegar

Onion, chopped

⅓ cup

Green pepper, chopped

2 tablespoons

Olive oil

Black olives, chopped

Oregano

Water

2 teaspoons

Sugar

Ina large saucepan, combine eggplant, onion, mushrooms, garlic, green pepper and oil. Simmer covered for 10 minutes. Add remaining ingredients; mix well. Simmer covered for 25 mins. Stirring occasionally. Eggplant should be cooked. Entire recipe equals 11 points. Great on crackers
