Makes 2 servings

 

1 cup part-skim ricotta cheese

 

1/3 cup shredded nonfat mozzarella cheese

 

1 plum tomato, diced

 

cup chopped lean ham

 

1/8 tsp freshly ground black pepper

 

4 (6") fat-free flour tortillas

 

 

 

 

 

 

 

 

1. Preheat oven to 400 degrees F.

 

2. In medium bowl, combine the cheeses, tomato, ham, and pepper.

 

3. Divide mixture evenly and spread on tortillas; roll up and wrap in foil. Place foil packets on baking sheet. Bake until heated through, about 10 minutes. Open packets carefully, as hot steam will escape.

 

Each serving provides: 8 POINTS
