ORZO w/ZUCCHINI

2 tsp olive oil

 

 

cup onion chopped

 

 

1 medium zucchini grated thick

 

 

cup uncooked orzo (rice-shaped pasta)

 

1 clove garlic minced

 

 

2 Tbsp parmesan

 

 

 

 

 

In medium saucepan heat oil. Add onion, cook, stirring as needed, till softened, 5 min. Add zucchini & cook till tender 4-5 min. Stir in orzo & garlic, cook, stirring till orzo is just golden, 2-3 min. Add 1 cup water S salt. Bring to a boil. Reduce heat & simmer uncovered till orzo is tender, about 11 min. Top with parmesan & serve.
