8 oz fettuccine

2 tsp margarine

1 onion, finely chopped

⅔ cup part-skim ricotta cheese

⅔ cup fat-free egg substitute

½ cup skim milk

2 slices Canadian bacon, cut into strips

¼ cup grated Parmesan cheese

1 Tbsp chopped oregano

1/2 tsp salt

¼ tsp freshly ground black pepper

Fresh oregano sprigs

1. Cook pasta according to package­directions; drain and keep warm.


2. While pasta is cooking, in large nonstick saucepan, melt margarine. Add onion and garlic and saute until softened, about 5 minutes.


3. In large bowl, with electric mixer, beat ricotta until smooth. Stir in egg substitute and onion mixture, stirring until combined. Stir in milk, bacon, 3 Tbsp Parmesan, the oregano, salt, and pepper.


4. Add pasta; cook, stirring gently, until mixture has thickened, about 2 minutes. Sprinkle with the remaining 1 Tbsp Parmesan and garnish with oregano.
