Chicken Salad Veronique

Makes 4 servings

 

Each servings provides: 3 points

 

 

 

2 cups shredded cooked skinless boneless chicken breasts

20 small grapes, halved

1 carrot, coarsely grated

celery stalk, thinly sliced

1 Tbsp chopped parsley

1 Tbsp fresh lemon juice

onion, grated

cup plain nonfat yogurt

1 tsp curry powder

tsp salt

tsp freshly ground black pepper

4 cups mixed salad greens

 

 

1. In medium bowl, combine chicken, grapes, carrot, celery, parsley, and lemon juice.

 

2. In small bowl, combine onion, yogurt curry, salt and pepper. Pour over chicken mixture; toss to combine. Serve over salad greens.
