Chicken-Scallop Gratin

Serve these delightful individual casseroles with rice pilaf or hot biscuits, and a big platter of asparagus.

6 ounces skinless cooked chicken breast, cut into bite-size pieces

2 teaspoons stick margarine

cup minced onion

cup minced celery

cup minced green bell pepper

cup low-sodium chicken broth

teaspoon dried thyme leaves

13 ounces sea scallops, cut into bite-size pieces

1/ 2 cup evaporated skimmed milk

1 tablespoon all-purpose flour

cup fat-free mayonnaise-style dressing (12 calories per tablespoon)

1 teaspoon Dijon-style mustard

teaspoon salt

teaspoon black pepper

Pinch ground red pepper

3 tablespoons plain dried bread crumbs

ounce grated Parmesan cheese

1 teaspoon paprika (preferably Spanish)

 

Adjust oven racks to divide oven into thirds. Preheat oven to 450oF. Spray 4 individual ramekins with nonstick cooking spray.

 

Divide chicken evenly among prepared ramekins; set aside. In medium saucepan, heat margarine; add onion, celery and green pepper. Cook over medium heat, stirring constantly, 2-3 minutes, until onion is softened. Add broth and thyme; bring to a boil. Add scallops; remove saucepan from heat. Let mixture stand 5 minutes.

 

With slotted spoon, divide scallops evenly among ramekins

 

In small bowl, using wire whisk, combine milk and flour, blending until flour is dissolved. Strain and add to broth mixture; continuing to whisk, bring to a boil over high heat.

 

Reduce heat to low; simmer 10 minutes, stirring often. Remove saucepan from heat.

 

With whisk, stir mayonnaise-style dressing, Dijon mustard, salt, black pepper and ground red epper into broth mixture; divide mixture evenly among ramekins.

 

In small bowl, combine bread crumbs, Parmesan cheese and paprika; sprinkle one-fourth of mixture into each ramekin.

 

Bake in upper third of oven 10 minutes, until topping is golden brown and mixture is bubbling
