Mary Z's Potato Salad

INGREDIENTS

 

12 ounces pealed cooked size "B" potatoes, cut thin

2-3 Tablespoons chopped onion

cup skim-plus milk

1 Tablespoon cider vinegar

5 tablespoons to-fat mayonnaise salt, and pepper to taste

 

Place potatoes and onions in a medium bowl. In blender, add skim milk, vinegar, and mayo. Blend thoroughly. Add to potatoes and onions. Salt and pepper to taste. Chill at least 4 hours-best to chill overnight. Makes 4 servings, 3 points each.
