Cream of Cauliflower Soup (Weight Watchers' style)

 

1 medium hed of cauliflower (about 2-1/2 lbs.),

trimmed and divide into

florets (Book says 0 for 1 cup-I counted it as 3)
2 tsp salt
tsp nutmeg
tsp fresh ground pepper
2 Tbl "I can't believe it's not butter" Light style ( 2 pts)
2 cups chicken broth (made with 2 bouillon cubes and 2 C water) (0 pts)
2 cups Skim Plus milk (4 pts)
2 Tbl corn starch (1)
(total points=10)
(4-6 servings)

 

 

 

Place cauliflower in large saucepan with salt and 2 cups water.

Bring to boil and boil until tender about 30 mins.

Drain well.

Add half the cauliflower, all nutmeg and pepper, 1 tsp butter and 1 cup broth and puree and return to pan.

Puree remaining cauliflower and butter and broth, and add to pan.

Dissolve cornstarch into cup skim milk till smooth, then stir this into 1-3/4 cups skim milk.

Whisk this into pan.
Set uncovered over moderate heat and bring to serving temperature, 3 to 5
mins.

Adjust seasonings and serve immediately (or chill several hours and
serve cold).

If you divide this by 4 servings, it comes to 2 pts per serving or 10 points for the whole thing!!!!
